Session 1 — From Bean to Bar (1.5h)
A guided journey from the cacao bean to the finished bar to learn how to recognize real chocolate.
- What real chocolate is (and is not): ingredients and sensory cues.
- Bean-to-bar process: fermentation, drying, roasting, grinding, refining and tempering.
- Chocolate types: dark, milk and white — composition and flavor differences.
- Health benefits of real chocolate.
Session 2 — Drinking Chocolate & Tradition (1h)
A tasting of ancestral, traditional and contemporary cacao drinks — memory, nourishment and continuous reinvention.
- We’ll explore ancestral, traditional and contemporary preparations of cacao beverages.
- We’ll discuss the role of cacao and chocolate in Colombia.
- Special focus on Bogotá’s drinking-chocolate tradition.
